Perfect Slow Cooker Pot Roast

This cozy slow cooker pot roast is absolutely perfect to prep in advance to enjoy on a chilly evening!
Ingredients
  • 1 beef chuck roast
  • Kosher salt as needed
  • Freshly ground black pepper as needed
  • 2 tbsp. olive oil + more if needed
  • 1 yellow onion, chopped
  • 5 garlic cloves, minced
  • 2 tbsp. tomato paste
  • 3 tbsp. flour
  • 5-6 sprigs fresh thyme (add fresh rosemary or sage if you'd like too!)
  • 2 cups beef broth
  • 2 cups red wine
  • 1 tsp. smoked paprika
  • 2 tsp. dried oregano
  • 2 tbsp. soy sauce
  • 1.5 lbs. baby potatoes
  • 6 large carrots, peeled and cut into large slices
Instructions
  1. Pat the beef chuck roast dry on both sides with a paper towel, then generously season with kosher salt and freshly ground black pepper.
  2. Heat the olive oil in a large skillet and brown the beef chuck on both sides. You want a nice crust! Transfer the meat to your slow cooker, then add the onions and garlic to the skillet. Add more olive oil if needed and cook until onions are translucent. Add the tomato paste and stir, cooking for a few minutes.
  3. Add the flour and mix to combine, then while whisking pour in the beef broth and red wine. Add the soy sauce, oregano, smoked paprika, and fresh thyme. Bring to a simmer, then pour over the meat in the slow cooker.
  4. Set your slow cooker to high for 5-6 hours or low for 8-10 hours. Add the carrots and potatoes in the last 90 minutes of cooking. During this time, taste the broth and add more salt and pepper if needed.
  5. Serve with crusty bread and enjoy!
