Sourdough Apple Cider Donut Muffins

These apple cider donut muffins are the perfect way to enjoy the flavors of an apple cider donut in an easy-to-make muffin form!
Ingredients
Apple cider donut muffins
  • ¼ cup whole milk
  • 2 tbsp. melted butter
  • ¼ cup plain Greek yogurt
  • 1 egg
  • 100g sourdough discard
  • 1 tsp. vanilla extract
  • ¼ tsp. almond extract
  • 1½ cups all-purpose flour
  • ½ cup applesauce
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ cup granulated sugar
  • ¼ tsp. salt
  • ¼ tsp. nutmeg
  • ½ tsp. cinnamon
Cinnamon sugar topping
  • 4 tbsp. melted butter
  • ½ cup granulated sugar
  • 1½ tsp. cinnamon
Instructions
  1. Preheat oven to 425 degrees. Spray a mini muffin tin with nonstick cooking spray and set aside.
  2. In a large bowl, whisk together the milk, melted butter, sourdough discard, egg, vanilla extract, almond extract, and applesauce.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, sugar, salt, nutmeg, and cinnamon.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. If you have time, let the batter sit here for 20 minutes. If you don't have time, you can also bake them right away.
  5. Bake the muffins at 425 degrees for 3-4 minutes before decreasing the temperature to 350 degrees and baking for 8-10 more minutes until a toothpick inserted into the center comes out clean.
  6. Melt the butter in a small bowl and in a separate bowl, combine the sugar and cinnamon. Dip the muffins into the melted butter first, then dip into the cinnamon sugar mixture.
  7. These muffins are best enjoyed warm, so serve immediately and enjoy!
