Ingredients
  • 1 tbsp. olive oil
  • 1 onion, finely chopped
  • 3-4 cloves garlic, minced
  • 2 medium carrots, peeled and finely chopped
  • 2 medium zucchini, finely chopped
  • 1½ lbs. ground turkey
  • 1½ tsp. smoked paprika
  • 1½ tsp. salt + more to taste
  • 1½ tsp. oregano
  • ½ tsp. ground black pepper
  • 1 cup milk
  • 1 15 oz. can tomato sauce
  • 4 cups broth
  • 16 oz. short-cut pasta (I use elbow pasta)
  • 1½ cups shredded cheddar cheese
  • 1 cup plain, full-fat Greek yogurt
Instructions
  1. In a large pot, heat the olive oil. Add onions, garlic, and carrots and cook for 5 minutes until tender. Add the zucchini and cook for an additional few minutes.
  2. Add the ground turkey, smoked paprika, salt, oregano, and pepper. Brown the turkey, breaking it into pieces as it cooks.
  3. Once the turkey is browned, add the milk, tomato sauce, and broth. Bring to a simmer, stirring every few minutes, and cook until the pasta is tender.
  4. Once the pasta is cooked, stir in the cheese and Greek yogurt until the cheese is melted.
  5. Enjoy!
