Orzo Meatball Bake

Ingredients
Meatballs
  • 1 lb. ground beef
  • 1 lb. ground pork
  • ½ cup parmesan cheese
  • 1 tsp. salt
  • 1 tsp. Italian seasoning
  • 1 egg
  • ½ cup Italian seasoned breadcrumbs
  • 1 tbsp. olive oil
Orzo Bake
  • 2 cups water
  • 15 oz. diced tomatoes
  • 1 jar pasta sauce
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt
  • ½ tbsp. Italian seasoning
  • 1¼ cups orzo pasta
  • 2 cups mozzarella cheese
Instructions
  1. Preheat oven to 400 degrees Fahrenheit and spray a 9 x 13 baking dish with nonstick cooking spray.
  2. In a large bowl, add the meatball ingredients: ground beef, ground pork, parmesan cheese, salt, Italian seasoning, egg, and breadcrumbs. Mix together with your hands, then form into meatballs and place in the baking dish. Bake for 10 minutes in the baking dish.
  3. Remove the baking dish from the oven and carefully add the other ingredients. Add the water, diced tomatoes, pasta sauce, garlic powder, onion powder, salt, Italian seasoning, and pasta. Gently stir to combine, ensuring that all the pasta is submerged in liquid.
  4. Bake for 15 minutes, then remove from the oven and top with cheese, bake for another 10 minutes.
  5. Let sit for about 10 minutes then serve and enjoy!
