In a frying pan, brown the ground beef. Break into pieces as it cooks. Once it's browned, add the onions and cook for a few more minutes.
Add the salt, pepper, garlic powder, paprika, Worcestershire sauce, and soy sauce. Stir to combine and cook for a few minutes. Taste and add more seasonings as needed.
Place an egg roll wrapper on a clean surface. Add a few spoons of the burger filling onto the egg roll wrapper. Add the cheese if using. Dip your fingers in water and wet the edges of the egg roll wrapper. Tuck in the edges first, then roll it up!
Wipe out the pan with a paper towel. Heat up about ½ an inch of oil in the pan and place the egg roll in the pan, seam side down. Cook on all sides until golden brown. This won't take long so keep an eye on them! Transfer to a plate lined with paper towels to soak up the excess oil.
To make the sauce, in a small bowl whisk together the mayonnaise, ketchup, mustard, garlic powder, onion powder, cayenne, pepper, salt, and relish.
Serve the egg rolls warm with the special sauce and enjoy!
