Air Fryer Salmon Taco Bowls

Ingredients
Air Fryer Salmon
  • 4 salmon fillets
  • 1 tbsp. brown sugar
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. smoked paprika
  • ½ tsp. salt
  • ½ tsp. ground black pepper
  • 1-2 tbsp. olive oil
Cilantro Lime Rice
  • 1½ cups long grain white rice
  • ½ tsp. salt
  • 1 tbsp. olive oil
  • 1 lime
  • 1 bunch fresh cilantro, finely chopped
Pineapple Salsa
  • 1 fresh pineapple, ripe and sweet
  • 1-2 jalapenos, seeded and finely chopped
  • ½ red onion, finely chopped
  • 1 lime
Instructions
  1. In a small bow, mix together brown sugar, cumin, chili powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Set aside.
  2. In a small saucepan, bring 3 cups of water to a boil. Add the salt, olive oil, and rice and simmer until the water is almost gone. Once you're at that point, turn off the heat and place the lid on the saucepan. Let the rice absorb the remaining water and fluff with a fork, then add the fresh cilantro and the juice of one lime.
  3. Rub the salmon fillets with the dry rub and just enough olive oil to coat. Cook the salmon in the air fryer at 400 degrees for 8 minutes. If you don't have an air fryer, heat some additional oil into a large skillet and cook the salmon for about 4 minutes per side until it is fork-tender.
  4. Place a scoop of cilantro lime rice in a shallow bowl with a salmon fillet and some of the pineapple salsa.
  5. Enjoy!
