Serves: 12 muffins

Ingredients
  • 3 large or 4 medium ripe bananas
  • ⅓ cup honey
  • 1 egg
  • ⅓ cup coconut oil, melted and cooled
  • 1 tsp. vanilla extract
  • ¼ cup coconut sugar
  • 1½ cups whole wheat flour
  • ½ cup cocoa powder
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 cup chocolate chips + more for topping if desired
  • ⅓ cup peanut butter
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray a muffin tin with nonstick cooking spray.
  2. In a large bowl, mash your bananas. Add your honey, egg, coconut oil, vanilla extract, and coconut sugar. Whisk well until smooth and creamy.
  3. In a separate bowl, whisk together your flour, cocoa powder, baking powder, baking soda, and salt. Add to the wet ingredients and mix until just combined.
  4. Fold in the chocolate chips, then distribute the batter between the muffin tin.
  5. Microwave the peanut butter for 20-30 seconds until you can drizzle it over the muffins. Drizzle some peanut butter over each muffin, and use a toothpick to swirl it into the batter.
  6. Top the muffins with additional chocolate chips if desired.
  7. Bake for 22-25 minutes until a toothpick inserted into the center comes out clean. Let cool in pan for 10-15 minutes before transferring to a wire rack to cool completely.
  8. Enjoy!
