1-2 lbs. cubed steak (I used pre-cut beef stew meat)
3 tsp. kosher salt
3 tsp. freshly ground black pepper
½ cup salted butter
8-10 cloves garlic, minced
3 springs fresh rosemary
Instructions
Preheat your grill to 500 degrees Fahrenheit before preparing your steak.
Place the cubed beef on a large plate, baking dish, or sheet pan. Season with salt and pepper and add to skewers. Leave a little bit of space in between each piece of steak to allow it to get crispy on all sides.
In a small saucepan, melt the butter. Add the garlic and rosemary and cook for a few minutes until fragrant. Remove the large rosemary sprigs. Any smaller pieces of rosemary can be left in the butter.
Baste the skewers with the garlic butter before adding to the grill. cook for 2-3 minutes per side until the edges are crispy and the internal temperature is 125 degrees Fahrenheit. Baste the skewers with additional garlic butter each time you flip them.
When done cooking, allow the skewers to cool for a few minutes before removing and adding to your charcuterie board.
