Fire up your grill! You want it to be between 400-450 degrees Fahrenheit. While the grill is warming up, prep your sliders.
In a large bowl, mix together the ground beef, breadcrumbs, and egg. Form into slider-sized patties. In a small bowl, mix together salt, seasoned salt, pepper, onion powder, garlic powder, and smoked paprika. Season the burgers on both sides and set aside.
Heat a large skillet on the stove and add bacon. Cook until crispy and browned, stirring frequently. Add the tomatoes and brown sugar and cook until the tomatoes are very soft. Be sure to scrape up any browned bits from the bottom of the pan.
Place the goat cheese and lemon juice in a food processor. Whip until very smooth, using a spatula to scrape down the sides to ensure it's all evenly mixed.
When the grill is ready, place some grapeseed oil on the flattop grill or in the skillet on your grill. If grilling over direct heat, drizzle some grapeseed oil on the burgers directly and use your hands to coat. Place the burgers on the grill, flipping every minute until the internal temperature reaches 130 degrees Fahrenheit for medium-rare. The burgers will puff up slightly in the middle as they cook, you can use a spatula to flatten them if desired.
Serve the sliders on buns with tomato-bacon jam, whipped goat cheese, and microgreens.
Enjoy!
