Sourdough Oatmeal Chocolate Chip Cookies

Ingredients
  • 8 tbsp. butter, softened
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg, at room temperature
  • ½ cup sourdough discard
  • 1 tsp. vanilla extract
  • ½ cup peanut butter (not natural peanut butter, use a brand like Skippy or Jif)
  • 1¼ cups all-purpose flour
  • ⅔ cup quick-cooking oats
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Line two rimmed baking sheets with parchment paper and set aside.
  2. Using a stand mixer or a large bowl and a hand mixer, cream together butter with brown sugar and granulated sugar. Add the egg and mix well to combine. Add the sourdough discard, vanilla extract, and peanut butter and mix again.
  3. In a separate bowl, whisk together flour, quick-cooking oats (not rolled oats!), baking soda, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix again.
  4. Finally, add the chocolate chips and mix to combine.
  5. Scoop out the cookie dough and place on the prepared baking sheet. Bake for 12-13 minutes until the cookies are set and the bottoms are golden brown.
