Creamy Chicken and Orzo Bake

Ingredients
Chicken Thighs
  • 6-8 bone-in, skin-on chicken thighs
  • 1 tsp. salt
  • ½ tsp. ground black pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 2 tbsp. olive oil
Creamy Lemon Orzo
  • 1½ cups orzo pasta
  • zest and juice of 1 lemon
  • ¾ cup heavy cream
  • 1½ cups chicken broth
  • 16 oz. grape tomatoes
  • 1 cup freshly grated parmesan cheese + more for topping
  • Fresh parsley for serving
Instructions
  1. Preheat oven to 375 degrees Fahrenheit.
  2. Pat the chicken thighs dry with a paper towel and season with salt, pepper, garlic powder, and onion powder.
  3. Heat the olive oil in a large skillet. For this recipe you can use an oven-safe braiser for the entire dish, or brown the chicken thighs in a skillet and transfer to a baking dish. Brown for 5-7 minutes per side, until the skin is golden brown and crispy. Transfer to a plate.
  4. In a baking dish, mix together pasta, lemon juice and zest, cream, chicken broth, tomatoes, and cheese.
  5. Place the chicken thighs on top of the pasta. Bake for 45-55 minutes until the internal temperature of the chicken reaches 165 degrees Fahrenheit.
  6. Serve topped with additional fresh parmesan and fresh parsley.
