Gruyere and Herb Biscuits

Ingredients
  • 3¼ cups all-purpose flour
  • 3 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. salt
  • 1 cup cold butter (2 sticks)
  • 2 tbsp. fresh herbs (I use rosemary and thyme)
  • ⅔ cup shredded gruyere cheese
  • 1 cup buttermilk
Instructions
  1. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  2. Use a box grater to grate your refrigerated or frozen butter into shreds. Add to the flour mixture and toss to combine.
  3. Add the fresh herbs and shredded cheese and mix again to combine.
  4. Pour the buttermilk into the bowl and mix until just combined. Be careful not to overmix!
  5. Transfer the dough to a lightly floured surface and press into a rectangle. Fold the rectangle over itself and press down again. Repeat this process one more time.
  6. Use a bench scraper to cut the dough straight down into squares. Transfer to a rimmed baking sheet lined with parchment paper. Freeze for 40-45 minutes.
  7. When ready to bake, preheat the oven to 425 degrees Fahrenheit. Brush the tops with heavy cream, melted butter, or egg wash (I use heavy cream), and bake for 20-25 minutes until golden brown.
