Lemon Bar Chia Pudding

Ingredients
  • 1 cup almond milk
  • 1 tsp. vanilla extract
  • ½ tsp. lemon extract
  • 2 tbsp. maple syrup + more to taste
  • ⅓ cup chia seeds
  • ½ tbsp. lemon zest
  • Juice of ½ a lemon
  • Shortbread cookies for serving
  • Lemon curd for serving
Instructions
  1. In a bowl, whisk together almond milk, vanilla extract, lemon extract, maple syrup, chia seeds, lemon zest, and lemon juice. Cover and refrigerate overnight.
  2. Serve in a jar layered with crumbled shortbread cookies and lemon curd or in a bowl topped with the crumbled cookies and lemon curd.
  3. Enjoy!
