Sweet Potato Cake with Maple Cream Cheese Frosting

This sweet potato cake is moist, delicious and perfectly spiced. Topped with maple cream cheese frosting for a truly amazing dessert.
Ingredients
  • 2 cups all-purpose flour
  • 1¾ granulated sugar
  • 2½ tsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1½ tsp. cinnamon
  • ¾ tsp. ground dried ginger
  • ½ tsp. nutmeg
  • ½ tsp. allspice
  • ¼ tsp. cloves
  • 1¾ cup cooked, mashed sweet potato
  • 3 eggs, at room temperature
  • 1 tsp. vanilla extract
  • ¾ cup neutral oil like canola or vegetable oil
  • ¼ cup sour cream, at room temperature
  • ½ cup butter, softened
  • 4 oz. cream cheese, at room temperature
  • 3 cups powdered sugar
  • 3-4 tbsp. pure maple syrup
  • Pinch of salt
Instructions
  1. Preheat oven to 350 degrees and spray a 9 x 13 baking pan with nonstick cooking spray. Line with parchment paper for easy removal.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cloves. Set aside.
  3. To a blender add sweet potato, eggs, oil, and sour cream. Blend until smooth and creamy.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Pour the batter into the prepared pan and bake for 30-40 minutes until a toothpick inserted into the center comes out clean.
  5. Let cool completely then use the parchment paper to transfer to a serving plate.
  6. Using a stand mixer or a hand mixer, prepare the frosting. Cream together the butter and sugar and gradually add the butter and sugar. Add a pinch of salt and the maple syrup, one tablespoon at a time, until desired consistency is reached.
  7. Spread the frosting over the cake and sprinkle with cinnamon if desired.
