Pumpkin Spice Granola

Ingredients
  • 4 cups rolled oats (certified gluten-free, if necessary)
  • 1½ cups pecans
  • 4 tbsp. flaxseed meal
  • ¾ cup pepitas
  • ½ cup maple syrup
  • ½ cup melted coconut oil
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ¼ tsp. cloves
  • ¼ tsp. allspice
  • ½ tsp. ginger
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, mix together rolled oats, pecans, flax meal, and pepitas.
  3. In a liquid measuring cup or small bowl, mix together maple syrup, coconut oil, vanilla extract, cinnamon, nutmeg, cloves, allspice, and ginger.
  4. Add the coconut oil mixture to the oats mixture and mix until all the oats are coated in oil.
  5. Spread the granola onto the prepared baking sheet and pat down with a wooden spoon or spatula.
  6. Bake for 20-25 minutes until golden brown. Allow to cool completely on the baking sheet before breaking into granola clusters.
  7. Store in an airtight container for up to 10 days.
