House Chopped Salad

Ingredients
Chopped Salad
  • 1 head romaine lettuce, chopped into bite-sized pieces
  • 1 can chickpeas, rinsed and drained
  • ¾ cup salami, cut into thin strips
  • 8 oz. mozzarella cheese, cubed
  • ⅓ cup chopped banana peppers
  • ⅓ cup sliced kalamata olives
  • 1 red bell pepper, chopped
  • 1 pint grape or cherry tomatoes, halved
Creamy Parmesan Vinaigrette
  • ⅓ cup olive oil
  • ⅓ cup red wine vinegar
  • ½ cup grated parmesan cheese
  • ⅓ cup plain Greek yogurt
  • ½ tsp. salt + more to taste
  • 1 clove garlic, minced
  • 1 shallot, minced
  • 2 tsp. honey
  • Lots of freshly ground black pepper
Instructions
  1. Place all the salad ingredients in a large bowl: lettuce, chickpeas, salami, mozzarella cheese, banana peppers, olives, red pepper, and tomatoes.
  2. To a food processor or high-speed blender, add the dressing ingredients: olive oil, red wine vinegar, parmesan cheese, yogurt, salt, garlic, shallot, honey, and black pepper. Blend until smooth.
  3. Toss the salad with the dressing and serve immediately topped with more parmesan cheese and freshly ground black pepper.
