Sheet Pan Gnocchi with Broccolini and Tomatoes

Ingredients
  • 32 oz. gnocchi
  • 16 oz. broccolini, chopped
  • 1 pint grape tomatoes
  • 3 tbsp. olive oil
  • ½ tbsp. dried oregano
  • 2 tsp. dried basil
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • Pinch of red pepper flakes
  • 1 tsp. salt
  • ½ tsp. ground black pepper
  • ¼ cup parmesan cheese
  • Fresh basil for topping
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Add gnocchi, broccolini, and tomatoes to a sheet pan.
  2. Drizzle with olive oil and sprinkle with oregano, basil, garlic powder, onion powder, red pepper flakes, salt, and pepper. Toss to evenly coat.
  3. Roast for 25-30 minutes until broccolini is crisp tender. Add the parmesan cheese and mix to evenly coat.
  4. Serve with extra parmesan cheese, fresh basil, and freshly ground black pepper.
