Healthy Peanut Butter Blossoms

Ingredients
  • 1 cup natural peanut butter
  • ¼ cup pure maple syrup
  • 1 egg
  • 1 tsp. vanilla extract
  • ¼ cup coconut sugar
  • ¾ cup oat flour
  • ¾ cup almond flour
  • ¼ tsp. salt
  • ¾ tsp. baking soda
  • Turbinado sugar
  • Hershey's kisses
Instructions
  1. Preheat oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper. Set aside.
  2. In a large bowl, mix together peanut butter, maple syrup, egg, vanilla extract, and coconut sugar.
  3. In a separate bowl, whisk together oat flour, almond flour, salt, and baking soda.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Form the cookies into balls and roll in the turbinado sugar.
  6. Place on the prepared cookie sheets and press down slightly.
  7. Bake for 8-10 minutes until the bottoms are golden brown. While the cookies are baking, unwrap your Hershey's kisses.
  8. Once the cookies come out of the oven, press one Hershey's kiss into each cookie.
  9. Allow to cool a few more minutes on the baking sheet before transferring to a wire rack to cool completely
