Snowball Cookies

Ingredients
  • 2⅓ cups all-purpose flour
  • ½ tsp. salt
  • ½ tsp. baking powder
  • 1 cup unsalted butter, softened
  • 2 oz. cream cheese, softened
  • 1 cup powdered sugar + more for dusting
  • 1 tsp. vanilla extract
  • ½ tsp. almond extract
  • 1 egg, at room temperature
Instructions
  1. Preheat oven to 375 degrees Fahrenheit and line two rimmed baking sheets with parchment paper. Set aside.
  2. In a medium bowl, whisk together flour, salt, and baking powder.
  3. Using a stand mixer or a large bowl and a hand mixer, cream together butter, cream cheese, and sugar. Add the vanilla and almond extracts and mix again. Add the egg and mix until light and fluffy.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Form the cookies into balls and roll in powdered sugar.
  6. Bake for 8-10 minutes until the bottoms begin to golden brown. Once the cookies are cool enough to handle, roll in powdered sugar again.
