Double Chocolate Zucchini Bread

Ingredients
  • 2 cups one-for-one gluten-free all-purpose flour substitute
  • ¾ cup coconut sugar
  • ½ cup cacao or cocoa powder
  • 1½ tsp. baking powder
  • ½ tsp. baking soda
  • 1 cup shredded zucchini
  • 1 cup unsweetened vanilla almond milk
  • ½ cup unsweetened applesauce
  • ½ cup melted coconut oil
  • 3 tbsp. maple syrup
  • 1 tsp. vanilla extract
  • ¾ cup chocolate chips + more for topping
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray a loaf pan with nonstick cooking spray and line with parchment paper. Set aside.
  2. In a medium bowl, whisk together flour, coconut sugar, cocoa powder, baking powder, and baking soda, set aside.
  3. In a large bowl, mix together zucchini, almond milk, applesauce, coconut oil, maple syrup, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until combine.
  5. Fold in the chocolate chips. Pour the batter into the prepared pan and sprinkle with chocolate chips.
  6. Bake for 50-60 minutes until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
