Grilled Greek Chicken Kebabs

Ingredients
  • 2-3 chicken breasts, cubed
  • 1 tsp. salt
  • ½ tsp. freshly ground black pepper
  • 4 cloves garlic, minced
  • ½ tbsp. dried oregano
  • 2 tbsp. olive oil + more for grill
  • Juice and zest of one lemon
  • ½ cup plain Greek yogurt
Instructions
  1. In a medium bowl whisk together salt, pepper, garlic, oregano, 2 tbsp. olive oil, lemon juice, lemon zest, and Greek yogurt. Place the chicken in a shallow dish or in a gallon size ziplock bag. Pour the marinade over the chicken and mix to coat. Refrigerate for 6-8 hours.
  2. When it's time to grill, skewer the chicken onto kebabs and preheat your grill. I used a smokeless grill set to 450 degrees Fahrenheit. You can also use a grill pan or an outdoor grill. Brush the grates of your grill or grill pan with olive oil and place the kebabs on. Grill for 10 minutes, rotating halfway through cooking. Ensure the internal temperature had reached 165 degrees Fahrenheit before serving.
  3. Serve with your favorite side dishes! I like using roasted potatoes and broccoli.
