Garlic and Herb Roasted Potatoes

Ingredients
  • 2 lbs. baby potatoes, halved or quartered
  • 3 tbsp. olive oil
  • 1½ tsp. salt
  • 4 garlic cloves, minced
  • ½ tsp. black pepper
  • 3 tbsp. finely chopped fresh herbs. I used a mix of rosemary, thyme, dill, and oregano
  • 8 oz. baby portobella mushrooms, quartered
  • 2-3 balls of fresh burrata cheese
Instructions
  1. Preheat oven to 400 degrees Fahrenheit. Spread the potatoes on a rimmed baking sheet lined with parchment paper.
  2. In a small bowl, mix together olive oil, salt, garlic, pepper, and herbs. Spread the mixture over the potatoes and toss with your hands to combine.
  3. Roast for 15 minutes. Add the quartered mushrooms to the baking sheet and toss to combine, then roast for another 10-15 minutes until the potatoes are tender.
  4. Transfer the potatoes to a serving dish and tear apart a few balls of fresh burrata to place on top. Serve immediately.
