½ cup chocolate chips + more for topping if desired
Instructions
Preheat oven to 350 degrees Fahrenheit.
In a large bowl, mash the bananas. Add eggs, vanilla extract, almond milk, and maple syrup and mix to combine.
Add oats, baking powder, cinnamon, salt, walnuts, and chocolate chips and mix to combine.
Spray a baking dish with nonstick cooking spray (I use an 8 x 10 baking dish but you can use any comparable size) and pour the batter into the pan. Top with additional chocolate chips if desired.
Bake for 25-30 minutes or until the center of the oatmeal is set.
Serve warm. Enjoy!
