Garlic Butter Shrimp with Orzo

Ingredients
  • 1 cup dry orzo pasta
  • 4 tbsp. butter
  • 5 cloves garlic, minced
  • 1 lb. uncooked shrimp (can be fresh or frozen and then thawed), peeled and deveined
  • 2 tsp. oregano
  • ½ tsp. red pepper flakes
  • ½ tsp. salt
  • ½ tsp. freshly ground black pepper
  • ¼ cup shredded Parmesan cheese
  • Chopped fresh parsley for garnish
Instructions
  1. Bring a large pot of salted water to a boil and cook according to package directions. Drain and set aside once it is cooked.
  2. While the water is boiling and the pasta is cooking, melt butter in a large skillet. I love using my cast iron skillet for this recipe! Add garlic and shrimp to the pan and cook until the shrimp are pink and opaque on both sides.
  3. Add oregano, red pepper flakes, salt, and pepper to the shrimp and stir to combine.
  4. Add the cooked and drained orzo to the skillet along with the parmesan cheese. Stir to combine as well as to melt the cheese.
  5. Serve topped with fresh parsley.
  6. Enjoy!
