Southwest Chopped Salad

Ingredients
Salad
  • 1 head romaine lettuce, cut into bite-sized pieces
  • 1 pint grape tomatoes, halved
  • 1 orange bell pepper, chopped
  • ¼ cup chopped cilantro
  • ¼ cup diced red onion
  • 1 can corn, rinsed and drained
  • 1 can black beans, rinsed and drained
  • Tortilla strips for topping
Dressing
  • ½ cup chopped cilantro
  • 1 jalapeno, seeded and chopped
  • 1 cup plain Greek yogurt
  • Juice of 1 lime
  • 1 tsp. salt + more to taste
  • 1 clove garlic, minced
Instructions
  1. In a large bowl, place lettuce, tomatoes, bell pepper, cilantro, onion, corn, and black beans. Toss and set aside.
  2. In a food processor, blend cilantro, jalapeno, yogurt, lime juice, salt, and garlic. Taste and add more salt if needed
  3. Drizzle the dressing over the salad and toss to combine. If making this salad in advance, wait to add the dressing until immediately before serving.
  4. Add the tortilla strips to the top and serve immediately, enjoy!
