Sheet Pan Chipotle Chicken Legs

Ingredients
  • 4 tbsp. olive oil
  • 2 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 2 tsp. salt
  • ½ tsp. ground black pepper
  • 3 tsp. smoked paprika
  • 2-3 chipotle peppers in adobo sauce, finely chopped
  • 1 tbsp. brown sugar
  • 8-10 chicken legs
  • 1 large sweet potato, cut into 1-2 inch pieces
  • 3 broccoli crowns, cut into florets
Instructions
  1. Preheat oven to 425 degrees Fahrenheit and line a large rimmed sheet pan with parchment paper.
  2. In a small bowl, mix together olive oil, chili powder, onion powder, salt, pepper, paprika, and chopped chipotle peppers. Set aside.
  3. Place the sweet potatoes and chicken on the preparing baking sheet and cover with about ⅔ of the sauce. Use your hands to coat and bake for 25 minutes.
  4. Remove pan from oven and add the broccoli and the rest of the sauce. Use a spatula to toss to coat, then return to the oven for an additional 20 minutes or until the vegetables are tender and the internal temperature of the chicken is 165 degrees Fahrenheit.
  5. Serve immediately, enjoy!
