Lemon Chicken Soup with Couscous

Ingredients
  • 3 tbsp. butter
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 3 tbsp. all-purpose flour
  • 6 cups chicken broth
  • 2 cups cooked, shredded chicken
  • Juice and zest of 1 lemon
  • ½ tsp. ground dried thyme
  • 1 tsp. salt + more to taste
  • ½ tsp. freshly ground black pepper
  • ¾ cup Israeli couscous
Instructions
  1. In a large pot, melt butter. Add onions and garlic and cook until fragrant and translucent. Add flour and stir to coat onions and garlic.
  2. Add chicken broth, shredded chicken, lemon juice, lemon zest, thyme, salt, and pepper. Bring to a simmer, taste and add more salt and pepper if desired.
  3. Add couscous and keep at a simmer over medium-low heat and cook until couscous is tender.
  4. Serve with crusty bread. Enjoy!
