Salted Chocolate-Dipped Peanut Butter Cookies

Ingredients
  • 1¼ cups all-purpose flour
  • ¾ tsp. baking soda
  • ½ tsp. baking powder,
  • ½ cup butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ¾ cup natural peanut butter
  • 1 egg
  • 1 tsp. vanilla extract
  • 1½ cups chocolate chips
  • ½ tbsp. coconut oil
  • Flakey sea salt, for topping
Instructions
  1. In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.
  2. Using a stand mixer and a bowl with a hand mixer, cream together butter with granulated sugar and brown sugar. Add peanut butter and mix again. Add egg and mix until combined, then add vanilla extract and mix again.
  3. Add the dry ingredients to the wet ingredients and mix until combined. Cover and refrigerate for one hour.
  4. When ready to bake, line two baking sheets with parchment paper and preheat oven to 350 degrees Fahrenheit. Form the cookies into balls, then press down with a fork as shown in the pictures. Bake for 9-11 minutes until the cookies are set. Let cool for 10 minutes on the baking sheets before transferring to a wire rack to cool completely.
  5. Once completely cooled, melt the chocolate chips and coconut oil. Use a microwave safe bowl and stir every 30 seconds until smooth. Dip the cookies into the chocolate and place onto the wire rack or onto a sheet of wax paper or parchment paper. Sprinkle with sea salt.
  6. Let the chocolate set and enjoy!
