Candy Cane Chocolate Chip Cookies

Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 eggs, at room temperature
  • 2 tsp. vanilla extract
  • ½ tsp. peppermint extract
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 3 cups all-purpose flour
  • 1½ cups chocolate chips
  • ¾ cup crushed candy canes + more for topping cookies if desired
Instructions
  1. Using a stand mixer or a large bowl and a hand mixer, cream together butter, granulated sugar, and brown sugar, scraping down the sides of the bowl as needed.
  2. Add eggs, one at a time, beating well after each addition.
  3. Add vanilla extract and peppermint extract and mix again.
  4. In a medium bowl, whisk together baking soda, salt, and flour. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the chocolate chips and crushed candy canes.
  6. Form the cookies into individual balls and refrigerate for at least 2 hours, ideally overnight. This allows the flavors to come together and ensures the cookies don't spread too much.
  7. When ready to bake, preheat oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.
  8. Place the cookie dough balls on the sheet and bake for 10-12 minutes until edges are set and golden brown. After removing from the oven, sprinkle the cookies with crushed candy canes.
  9. Let cookies cool completely on the sheet before removing from the baking sheet.
