Slow Cooker Pumpkin Bolognese

Ingredients
  • 1 lb. mild Italian sausage
  • 1 lb. ground beef
  • 1 yellow onion, chopped
  • 5 cloves garlic, minced
  • 28 oz. canned tomato sauce
  • 15 oz. canned pumpkin (not pumpkin pie filling)
  • 15 oz. canned diced tomatoes
  • 1 tbsp. dried oregano
  • 2 tsp. dried basil
  • 2 tsp. salt
  • ½ tsp. freshly ground black pepper
  • 1 tsp. ground dried thyme
  • ½ tsp. red pepper flakes
  • Pasta of choice for serving
  • Fresh herbs for topping, optional
  • Parmesan cheese for topping, optional
Instructions
  1. In a large skillet, brown sausage and ground beef, breaking into pieces as it cooks. Add onions and garlic and cook until translucent.
  2. Transfer the meat mixture to your slow cooker. Add tomato sauce, pumpkin, diced tomatoes, oregano, basil, salt, pepper, thyme, and red pepper flakes. Stir to combine.
  3. Set your slow cooker to "low" and cook for 8-10 hours. You can also do more or less but this is my favorite time for maximum flavor!
  4. Serve over your favorite pasta. Top with fresh basil or oregano and parmesan cheese, if desired.
  5. Enjoy!
