Cauliflower Tacos With Sweet Potato and Corn

Ingredients
  • ½ head cauliflower, chopped into small florets
  • ½ yellow onion, peeled and chopped
  • 1 large sweet potato, peeled and diced
  • 2-3 ears fresh corn, kernels removed
  • 3 tbsp. olive oil
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 tsp. garlic powder
  • 1 tsp. chili powder
  • ½ tbsp. cumin
  • 1 tsp. smoked paprika
  • 1 can black beans, rinsed and drained
For serving
  • Corn or flour tortillas
  • Fresh cilantro
  • Avocado
  • Cheese of choice
  • Diced red onion
  • Lime juice
  • Salsa
Instructions
  1. Preheat oven to 400 degrees Fahrenheit. Line a rimmed baking sheet with foil or parchment paper and spread the vegetables over it. Drizzle with olive oil. Mix all the seasonings together in a small bowl and sprinkle over the vegetables, using your hands to toss and coat.
  2. Bake for 20-30 minutes until vegetables are tender and have crispy edges.
  3. Add the black beans to the pan and toss to combine.
  4. Serve in tortillas with your favorite taco toppings! cilantro, avocado, salsa, sour cream, cheese, lettuce, red onion, etc.!
  5. Enjoy!
