Shrimp Teriyaki Bowls

Ingredients
  • 2 tbsp. olive oil
  • 1 lb. raw shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • ½ yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 1 large broccoli crown, chopped into small florets
  • 1 cup snow peas
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • ¼ cup soy sauce
  • 4 tbsp. rice vinegar
  • 3 tbsp. hoisin sauce
  • 1 tsp. ground dried ginger
  • 2 tbsp. cornstarch
  • 2 tbsp. water
  • 2 cups cooked rice, for serving
Instructions
  1. In a large skillet, heat olive oil. Add shrimp, garlic, and onion and cook until shrimp are pink and opaque.
  2. Add carrots, broccoli, and snow peas. Season with salt and pepper and cook until crisp tender, about 5 minutes. They will continue to cook in the sauce.
  3. In a small bowl or measuring cup, whisk together soy sauce, rice vinegar, hoisin sauce, ginger, cornstarch, and water.
  4. Pour the sauce over the shrimp and vegetables and stir to combine. Allow to come to a simmer and thicken.
  5. Serve shrimp and vegetables over rice.
  6. Enjoy!
