Banana Almond Butter Muffins

Ingredients
  • 3 very ripe bananas
  • 1 large egg
  • ½ cup plain Greek yogurt
  • ¼ cup honey
  • ½ cup almond butter
  • 2 tbsp. oil
  • 1 tsp. vanilla extract
  • 1½ cups whole wheat flour
  • ½ cup rolled oats
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • ½ cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees Fahrenheit and spray a muffin pan with non-stick cooking spray.
  2. In a large bowl, mash bananas. Add egg, Greek yogurt, honey, almond butter, oil, and vanilla extract and mix to combine.
  3. Add baking soda and salt, mix again.
  4. Add flour and oats and combine.
  5. Fold in chocolate chips.
  6. Divide evenly between 12 muffin cups.
  7. Bake for 20-22 minutes until a toothpick inserted in the center comes out clean.
