Swiss Chard and Parmesan Pasta

Ingredients
  • 12 oz. pasta of choice (I used whole wheat penne)
  • 3 Tbsp. butter
  • 2 cloves garlic, minced
  • ½ yellow onion, chopped
  • 2 tbsp. flour
  • 2 cups half and half
  • 1 large bunch rainbow chard, stems and leaves chopped separately
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • ¾ cup parmesan cheese, plus more for topping
Instructions
  1. Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and set aside.
  2. In the same pot, melt butter. Add garlic, onion, and chopped Swiss chard stems. Cook until tender, stirring occasionally, for about 5 minutes.
  3. Add Swiss chard leaves and cook until wilted.
  4. Add flour and mix. Add half and half and simmer over low heat until thickened.
  5. Add salt, pepper, and parmesan. Stir until combined.
  6. Return pasta to pot.
  7. Serve topped with parmesan cheese and fresh-ground pepper.
