Bacon Jalapeno Cornbread

Loaded cornbread to compliment just about any main dish!
Ingredients
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp. baking powder
  • ¼ cup sugar
  • 1 tsp. salt
  • 1 cup milk
  • ⅓ cup canola or vegetable oil
  • 1 large egg
  • 2 jalapeƱos, seeded and finely chopped
  • 10 slices bacon, cooked, drained, and crumbled
Instructions
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Spray 8 x 8 baking pan with non-stick cooking spray.
  3. In a medium bowl, whisk together cornmeal, flour, baking powder, sugar, and salt.
  4. In a separate bowl, whisk together milk, oil, and egg.
  5. Add wet ingredients to dry ingredients and mix until combined.
  6. Fold in jalapeƱos and bacon.
  7. Pour batter into prepared pan.
  8. Bake for 20-25 minutes until edges are golden brown and toothpick inserted into the center comes out clean.
  9. Allow to cool before serving.
