Sweet Potato Banana Muffins

Ingredients
  • 1½ cups cooked, mashed sweet potato
  • 2 ripe bananas, mashed
  • 1 egg
  • 1 tsp. vanilla
  • ½ cup plain Greek yogurt
  • ⅓ cup honey
  • 2 tbsp. oil
  • 1½ cups whole wheat flour
  • 1½ tsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • ¾ cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees Fahrenheit and spray a muffin tin with nonstick cooking spray.
  2. In a medium bowl, mash together sweet potato, banana, egg, vanilla, Greek yogurt, honey, and oil.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Add dry ingredients to wet ingredients and mix to combine.
  5. Fold in chocolate chips.
  6. Distribute batter evenly between 12 muffin cups in prepared muffin tin.
  7. Bake for 20-25 minutes until a toothpick inserted into the center comes out clean.
  8. Remove from pan to cool on a wire rack. Enjoy!
