Sweet Potato Banana Muffins

Serves: 12 muffins
- 1½ cups cooked, mashed sweet potato
- 2 ripe bananas, mashed
- 1 egg
- 1 tsp. vanilla
- ½ cup plain Greek yogurt
- ⅓ cup honey
- 2 tbsp. oil
- 1½ cups whole wheat flour
- 1½ tsp. baking powder
- 1 tsp. baking soda
- ¼ tsp. salt
- ¾ cup chocolate chips
- Preheat oven to 350 degrees Fahrenheit and spray a muffin tin with nonstick cooking spray.
- In a medium bowl, mash together sweet potato, banana, egg, vanilla, Greek yogurt, honey, and oil.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Add dry ingredients to wet ingredients and mix to combine.
- Fold in chocolate chips.
- Distribute batter evenly between 12 muffin cups in prepared muffin tin.
- Bake for 20-25 minutes until a toothpick inserted into the center comes out clean.
- Remove from pan to cool on a wire rack. Enjoy!
