Flourless Chocolate Peppermint Cake

Ingredients
  • 8 oz. semi-sweet chocolate, chopped
  • ½ cup butter
  • ¾ cup granulated sugar
  • 1 tsp. peppermint extract
  • 1 tsp. vanilla extract
  • ⅓ cup cocoa powder
  • 6 eggs
  • ¼ tsp. salt
  • Whipped cream and crushed candy canes for topping
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Grease an 8 inch round cake pan and line with parchment paper. Set aside.
  2. Use a double boiler to melt the chocolate and butter and stir until very smooth. Add the sugar, peppermint extract, and vanilla extract.
  3. Remove from heat and whisk in the eggs, one at a time, mixing very well after each addition until smooth and slightly fluffy.
  4. Fold in the cocoa powder and salt.
  5. Pour the batter into the prepared pan and bake for 25-35 minutes until the center appears to be set and a toothpick inserted into the center comes out clean.
  6. Let cool completely in the pan, then carefully remove and top with whipped cream and crushed candy canes.
