Quinoa Pizza Casserole

Ingredients
  • 1 lb. Italian sausage
  • 1 tbsp. olive oil
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 cups cooked quinoa
  • 1 15 oz. can tomato sauce
  • ½ tbsp. Italian seasoning
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • 4 oz. sliced pepperoni
  • 1 cup shredded mozzarella cheese
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large pan, brown Italian sausage, breaking into smaller pieces as it cooks.
  3. Add olive oil, onion, bell pepper, and garlic and cook until onions are translucent.
  4. Remove pan from heat. Stir in quinoa, tomato sauce, Italian seasoning, salt, and pepper.
  5. Spray a baking dish with non-stick cooking spray and spread with quinoa mixture.
  6. Top with sliced pepperoni and shredded cheese.
  7. Bake for 20-30 minutes until cheese is melted and casserole is bubbling.
