Double Chocolate Pumpkin Bundt Cake

Ingredients
  • 1 cup vegetable or canola oil
  • 2 cups granulated sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 1 15 oz. can 100% pumpkin puree (not pumpkin pie filling)
  • 2¾ cups all-purpose flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. salt
  • ½ cup unsweetened cocoa powder
  • 1½ cups chocolate chips
Instructions
  1. Preheat oen to 350 degrees Fahrenheit. Grease and flour a bundt pan.
  2. In a stand mixer or using a hand mixer, mix oil and sugar until smooth, about 5-8 minutes. Add eggs one at a time, mixing thoroughly after each addition.
  3. Add vanilla and pumpkin and mix again.
  4. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, salt, and cocoa powder.
  5. Add dry ingredients gradually to wet ingredients and mix until just combined.
  6. Fold in chocolate chips.
  7. Pour batter into bundt pan and bake for 55-65 minutes until a toothpick inserted into the center comes out clean
