Crock Pot Three Bean Chili

Serves: 10-12 servings
- 2 lbs. ground beef
- 1 yellow onion, diced
- 1 green bell pepper, diced
- 1 jalapeno, seeded and finely diced
- 3 garlic cloves, minced
- 1 can black beans, rinsed and drained
- 1 can dark red kidney beans, rinsed and drained
- 1 can pinto beans, rinsed and drained
- 1 28 oz. can tomato sauce
- 1 28 oz. can diced tomatoes
- 1 7 oz. can diced green chilis
- 1 cup beef broth*
- 2 tsp. salt + more to taste
- ¼ tsp. ground black pepper
- 2 tsp. smoked paprika
- 1½ tsp. chili powder
- ½ tbsp. cumin
- ½ tbsp. dried oregano
- In a large pot, brown ground beef. Add garlic, onion, jalapeƱo, and bell pepper and cook until onions are translucent.
- Add all ingredients to a crock pot. Stir to combine.
- Cook on low for 8-10 hours.
- Taste, adjust seasonings, and enjoy!
* depending on the saltiness of your broth you may want to adjust the added salt accordingly!
