Garlic and Herb Pork Loin

Ingredients
  • One 4-5 lb. pork loin
  • 4 cloves garlic, minced
  • 3 tbsp. fresh herbs
  • ⅓ cup olive oil
  • 1 tsp. salt + more to sprinkle on top
  • 1 tsp. fresh ground pepper + more to sprinkle on top
Instructions
  1. Preheat oven to 450 degrees Fahrenheit.
  2. In a small bowl, combine garlic, herbs, olive oil, salt, and pepper.
  3. Place the pork loin in a large Dutch oven or on a rimmed baking sheet lined with foil.
  4. Rub herb and garlic mixture all over all sides of the pork loin.
  5. Add an additional sprinkle of salt and a few cracks of pepper on top of the pork loin.
  6. Roast in oven for 40-45 minutes until internal temperature is 145 degrees Fahrenheit.
  7. Let rest for 10 minutes prior to slicing and serving.
